Cheesy Herby Garlic Toast

Up until recently, I’ve been afraid of garlic… There, I admitted it. I would only eat it in small doses and if it was well concealed in a recipe, and I would certainly NEVER eat garlic bread! But then, one day, I decided to be brave and try a piece of Texas toast… It was the four or five or how ever many cheese kind, so I felt okay with it. Turns out, it wasn’t half bad… In fact, I was hooked!


In fact, I now find myself having spaghetti for dinner sometimes once a week JUST so I have an excuse to eat my new obsession. 😏 Then the other day, something terrible happened! Spaghetti was on the menu but, when went to the freezer, NO Texas toast! πŸ™€πŸ™€ I couldn’t NOT have garlic bread… That was the whole point! So I was forced to improvise…

Due to my new found culinary courage, I happened to have a few cloves of garlic leftover in my fridge from some Salsa I’d used it in the other night… So I mixed up my own garlic buttery spread.


I also had some leftover hot sausage rolls from some brats we’d grilled earlier in the week. Those would do. If you want, however, you can certainly use a halved Italian bread loaf. Just double this recipe if you’re planning on making both halves. 


My garlic buttery spread consisted of butter AND olive oil, for the flavor, with some dried parsley and Italian seasoning, salt, pepper, and of course some finely minced garlic. I slathered it evenly on my four sausage roll halves, then wrapped them (yes, cover the tops too) up in aluminum foil and baked at 375 for about 15 minutes.


After the flavors had a chance to meld in, I pulled them out, unwrapped them, and topped with shredded mozzerella cheese, about a quarter cup per piece.


Pop them back in the oven to melt the cheese, 6-8 min. I like my cheese and bread edges a little toasty on top, so I finished them under a low broiler for about 2 more minutes once the cheese had melted, but you don’t have to do this.


That’s it! You’re own “Texas toast”… Well, with a little more flavor if you ask me! Put spaghetti on this weeks menu so you can give this yummy, crunchy, herby bread a try… And plan for a night of leftovers; you’re going to want to eat this more than once! πŸ˜‰βœŒοΈ #WhatIveGotCookin

Cheesy Herby Garlic Toast

Serves: 4 (unless 1 of them is me!  πŸ˜œ)

  • Half loaf Italian bread (or any hearty leftover bread/ rolls)
  • 2 Tbsp. Butter
  • 1 Tbsp. Olive oil
  • 1 Tsp. Dried parsley
  • 1 Tsp. Italian Seasoning
  • 1 clove garlic, finely minced
  • Salt & Pepper
  • 1 c. Shredded Mozerella cheese
  1. Mince garlic. Combine with butter, olive oil, parsley, Italian seasoning, salt and pepper.
  2. Spread evenly on bread. Wrap in foil and bake, 375 degrees for 15 minutes.
  3. Unwrap bread, and top with shredded cheese. Return to oven, uncovered, and bake an additional 6-8 minutes, until cheese is melted. 
  4. Finish under broiler for 1-2 min, if a toastier cheese top is desired.
